Received some inspiration from a bacon-loving friend, Bourbon Bacon Chocolate Chip Cookies. I omitted the bourbon and added chunks of dark chocolate instead of semi-sweet chips. They tasted delicious! A subtle hint of bacon flavor and bacon pieces that resembled a toffee texture that added a sweet crunch.
